Key Responsibilities:
Accurately cut, trim, fillet, and portion different types of fish according to company and customer specifications.
Inspect fish for quality, freshness, and defects before processing.
Operate and maintain cutting tools, knives, and equipment safely and efficiently.
Follow standard operating procedures for handling, cleaning, and storing seafood products.
Maintain cleanliness and sanitation of work areas and equipment in compliance with HACCP and food safety regulations.
Ensure proper labeling and weighing of processed fish.
Work efficiently in a fast-paced, cold environment while meeting production targets.
Report any equipment malfunctions or product quality issues to supervisors.
Qualifications & Experience:
Minimum 1–3 years of experience in fish cutting or seafood processing.
Proven background in the seafood industry (processing, wholesale, or retail).
Strong knife skills and knowledge of different cutting techniques (filleting, skinning, deboning, portioning).
Understanding of food safety, hygiene, and HACCP standards.
Ability to work in a cold, wet environment and handle raw seafood products.
Good communication and teamwork skills.
Physical ability to stand for long periods and lift up to 50 lbs.
Preferred:
Experience with industrial fish processing equipment.
Knowledge of various fish species and yields.
Previous experience in high-volume seafood production facilities.
