Job Brief

The Meat Manager/Pitmaster is in charge of all meat preparations with an emphasis on smoked meats and rotisserie style BBQ.

Some of the included responsibilities are: prepare ingredients and menu items in the kitchen & meat preparation facilities, maintain a clean, safe and sanitary working environment, and prepare & serve BBQ'd meats at onsite catering events.

Responsibilities

Include but are not limited to:

  • Setting up workstations with all needed ingredients and cooking equipment
  • Prepping & cutting meat & sauces
  • Smoking, braising, boiling, rotisserie bbq etc.
  • Input on Menu Development
  • Manage smoker's timelines to ensure timely meat production
  • Ensure great presentation by dressing dishes before they are served
  • Keep a sanitized and orderly environment in the meat room
  • Ensure all meat and other items are stored properly
  • Check quality of ingredients for meat production
  • Monitor stock and submit orders for meat & associatied ingredients as needed
  • Receiving and checking orders
  • Preparing and Serving food at Catering Events as needed

Other Tasks

  • Delivery of Catering Orders as needed
  • Attend Catering Events when needed
  • Participating in capturing Social Media Content

Useful Experience

  • Strong knowledge of different cuts of meat and cooking techniques
  • Proven experience as a cook
  • Experience in using cutting tools, cookware and bakeware
  • Excellent customer service skills with the ability to interact professionally with customers and staff members
  • Detail-oriented with strong organizational skills to manage inventory and ordering
  • Ability to work in a fast-paced environment and handle multiple tasks simultaneously
  • Knowledge of food safety regulations and best practices
  • Self directed with excellent time management
  • Ability to manage your own station
  • Excellent physical condition and stamina
  • Diploma from a culinary school will be an advantage
  • Clean Driving Record
  • G Drivers Licence
