Summary

The Sushi Station Lead Hand plays a key role in preparing high-quality sushi offerings and supporting front-line customer service within the Fanshawe Student Unions (FSU) food service operations. This position is responsible for leading daily sushi station prep, assembling sushi rolls and bowls, maintaining food safety standards, and helping to coordinate day-to-day station tasks. The ideal candidate brings strong attention to detail, a positive attitude, and a willingness to guide others while ensuring consistent food quality and service standards. This role requires a specialized skillset.
Additional responsibilities include, but are not limited to:
Cashier
The Cashier will provide customers with a high level of customer service, and will be responsible for processing credit or debit card and cash transactions using an electronic scanner and cash register. Other responsibilities will include compiling and maintaining non-monetary reports and records, stocking of products within the Oasis and area, and ensuring designated area is tidy and clean.


Kitchen Prep
The Kitchen Prep is responsible for the preparation of high-quality food in a timely, efficient, sanitary and consistent manner. The Kitchen Prep must be prepared to work in a fast-paced work environment, while maintaining the organizational ability to identify and act on job duties quickly and effectively. The Kitchen Prep must be prepared to work as a team member in a dynamic workplace, follow all safety procedures, and have a high threshold for heat in a kitchen environment.


Weekend or holiday work is possible. Contract may be extended pending approval.

Job Duties
Lead daily sushi station prep, including setting up ingredients and maintaining cleanliness throughout the shift.
Assemble sushi rolls, bowls, and other menu items consistently and accurately according to food safety and presentation standards.
Maintain a strong understanding of food handling procedures, especially in the safe preparation of raw ingredients.
Assist with receiving and inspecting product deliveries specific to sushi production.
Provide basic guidance to team members working in the sushi station and model best practices in food preparation and customer service.
Engage with customers, answer questions, and offer recommendations on sushi items.
Maintain an organized and sanitized workstation in accordance with hygiene protocols.
Monitor and replenish ingredients and supplies to ensure uninterrupted service.
Work collaboratively with the Culinary Manager and Hospitality Supervisors to suggest process improvements and menu ideas.
Float to other areas in the Hospitality department as required to support overall service delivery.
Perform other related duties as assigned.
Requirements
High school diploma or GED required.
Post-Secondary education in Culinary Arts or Hospitality Management considered an asset.
2 years experience in the restaurant industry preferred.
Previous food prep or culinary experience; sushi preparation experience is considered an asset.
Current Food Handlers Certification required.
Smart Serve Certification an asset.
Comfortable working with raw seafood and maintaining high hygiene standards.
Strong communication and organizational skills.
Willingness to learn, take initiative, and support team goals.
Flexibility to work various shifts including evenings and weekends as required.
