- Manages all Food and Beverage activities through subordinate staff and ensures they have sufficient resources available.
- Develops and directs Food and Beverage staff to achieve high levels of performance and customer service.
- Ensures appropriate stock levels are maintained.
- Ensure cleanliness and hygiene is maintained and that food products are rotated to ensure high standards of freshness. Ensures refrigerators and storerooms are organized and maintained and that all food products are correctly stored.
- Oversees the Human Resources issues, performance, safety and recruitment needs of the department. Manages the performance of direct reports including: training, appraising performance, providing positive and corrective feedback, coaching, and administering discipline.
- Assists with or contributes to the menu, department budget, undertakes corrective action, ensures scheduling and expenditures are controlled.
- Ensures that all food is prepared in accordance with predetermined quality standards.
- Ensures consistent food preparation and the highest calibre of food presentation and takes advantage of opportunities to improve upon both.
- Retains a thorough and updated knowledge of company policies and procedures, provincial and local regulations for casino operations, beverage service and food services.
- Liaises with government regulators that impact the operation of the department and the Casino.
- Liaises with the casino management team to ensure that a high level of effective communication is maintained and participates in casino initiatives.
- Holds meetings with kitchen staff and communicates Food and Beverage Department issues, concerns, and feedback to the Executive Chef, and the kitchen management team.
- Demonstrates a thorough knowledge of all emergency procedures.
- May coordinate department initiatives with Food and Beverage and casino staff. Identifies business opportunities and organizes or oversees the development and deliverables of these efforts.
- May undertake statistical analysis such as revenue reports, daily reconciliation, price mark ups, food costing, product inventories plus sales analysis of Food and Beverage products. Monitors and processes invoices and expenditures.
- Takes on additional responsibilities as required.
- Diploma or degree in culinary arts or restaurant management
- 2 to 5 years experience in restaurant supervision or an equivalent combination of education, and experience
- Red Seal or equivalent certification an asset
- Provincial certifications for alcohol service and food preparation
- Knowledgeable in safety and fire prevention / evacuation procedures
- Proven leadership skills – able to direct and supervise staff
- Working knowledge with spreadsheets, word processing software, email, point of sale and inventory control applications
- General understanding of casino operations
- Excellent problem solving skills
- Self motivated and able to multi-task
- Excellent communicator – both written and verbal English
