MY HOSPITALITY TEAM

Hospitality is the relationship between the MSA and all the guests that interact with the MSA Student Centre. We create a welcoming environment and inclusive food experiences rooted in genuine hospitality that help students feel like they belong at the MSA.

WHAT YOU DO

Reporting to the Senior Manager, Hospitality, the Sous Chef provides daily operational support in all the MSA food service operations by supporting our staff in delivering an inclusive, affordable and exciting food program.

What Success Looks Like in This Role: You will work under the supervision and direction of the Assistant Manager, Culinary (Executive Chef) to create an environment for the team that is focused on strong Health & Safety practices, diligent controls around recipes and food safety, and a nurturing atmosphere so that our staff are supported and engage in meaningful work.

Primary Accountabilities:

· Support with the creation and execution of a food program that support the student life cycle.

· Oversee a team of cooks and dishwashers to ensure that we maintain standards, cost controls and food safety measure.

· Collaborate with other MSA departments to provide student-focused offerings aligned to the strategic plan.

· Provide financial and operational recommendations by establishing an accountable and sustainable food experience model.

HOW YOU DO IT

Responsibilities

Team Support

· Support with the management and development of Heart of House team members.

· Provide on the job support and feedback to student staff to ensure safe operations & adherence to standards.

· Celebrate Personal and Team success.

· Support with scheduling and payroll.

Food Experience Operation

· Shift supervisor of a full-service restaurant as well as quick-service outlets.

· Participate with menu development that is thoughtful and in consideration of student needs and feedback.

· Ensuring value-based Service Excellence and quality standards.

· Prepare food orders and assist the Assistant Manager, Culinary with maintaining sustainable practices including food cost controls and waste management.

· Execute food experiences to support all MSA departments and initiatives.

Health & Safety

· Ensures H&S compliance with operational standards, organizational policies, federal, provincial, and municipal laws in accordance with Public Health.

· Ensure risk management and preventative measures are in place.

· Ensures Food Services maintenance and equipment issues are addressed.

What you Need in Education, Experience and Training for your Department:

· Demonstrated ability to guide the mentoring process from onboarding to achievement.

· Minimum 3 years' culinary experience overseeing a multi-unit operation.

· Experience working with both Quick-Service Restaurants and Full-Service Restaurants.

· Basic & Advanced Food Safety Training.

· Exceptional knowledge of Public Health guidelines.

· Understanding and experience with various cooking methods, ingredients, equipment, and procedures.

· Comprehensive knowledge of building a diverse menu that considers a high volume of dietary restrictions and allergies.

· Catering & events experience working with medium sized volumes of food service is preferred.

· Ability to manage in a diverse environment with a focus on client and customer services.

· Proven general research skills that include the ability to conduct research, analyze information, articulate alternatives, draw conclusions and provide practical recommendations.

· Experience working with community partners and institutional stakeholders.

Physical Demands/Work Environment

· Standard work hours are 35 hours per week.

· Ability to lift 50 lbs.

· Travel between campuses may be required.

· Able to stand for prolonged periods.

· Availability to work occasional weekends and evenings.
