Dishwasher / Overnight Cleaner
Job Description
Position Summary
The Dishwasher / Overnight Cleaner plays a key role in keeping the restaurant clean, sanitary, safe, and ready for service. The shift begins by supporting kitchen operations through efficient dishwashing and closing duties, then transitions into independent overnight cleaning after the restaurant closes. The ideal candidate is dependable, detail-oriented, physically capable, and comfortable working with limited supervision.
Key Responsibilities
Dishwashing and Kitchen Support
- Wash and sanitize dishes, glassware, cutlery, pots, pans, utensils, and kitchen equipment using commercial dishwashing equipment or approved hand-washing methods.
- Sort, organize, and return clean items to their designated storage areas.
- Keep the dish area clean, dry, organized, and free of hazards throughout the shift.
- Monitor dish machine temperatures and chemical levels, and report equipment or supply issues promptly.
- Remove garbage, recycling, and food waste according to restaurant procedures.
- Support the kitchen team with closing tasks and other reasonable duties as assigned.
Overnight Cleaning
- Complete the approved overnight cleaning checklist and prepare all assigned areas for opening.
- Sweep, scrub, and mop kitchen, dish area, storage, service, and other assigned floors, including edges and hard-to-reach areas.
- Clean and sanitize approved work surfaces, sinks, walls, doors, shelving, mats, and exterior equipment surfaces.
- Clean and sanitize staff and guest washrooms, and restock soap, paper products, and other supplies.
- Empty, clean, and reline waste and recycling containers; move waste to the designated disposal area.
- Clean mirrors, glass, stainless steel, and other high-touch surfaces without leaving residue or streaks.
- Use cleaning chemicals, personal protective equipment, and equipment according to labels, training, and safety procedures.
- Secure cleaning supplies after use and leave equipment clean and stored correctly.
- Document completed tasks and report damage, pest activity, safety hazards, low supplies, or maintenance concerns to management.
- Follow closing, security, key-control, and alarm procedures when working after hours.
Qualifications and Skills
- Previous dishwashing, janitorial, or commercial cleaning experience is an asset; training may be provided.
- Reliable, punctual, and able to work independently during overnight hours.
- Strong attention to detail and commitment to sanitation and food-safety standards.
- Ability to follow written checklists, product labels, instructions, and safety procedures.
- Effective communication and a cooperative, team-focused attitude.
Schedule and Working Conditions
- Availability for late-evening and overnight shifts, including weekends and holidays as scheduled.
- Work is performed in a fast-paced environment with heat, steam, water, cleaning chemicals, noise, and wet or slippery surfaces.
- The role requires prolonged standing and walking, frequent bending, reaching, pushing, pulling, and repetitive hand movements.
- Ability to lift and carry up to 23 kg (50 lb), with assistance when required.
Performance Expectations
- Assigned areas are completed to the restaurant’s cleaning and sanitation standards before the end of each shift.
- Clean dishes and equipment are available when needed and stored safely.
- Checklists and required logs are completed accurately.
- Safety, maintenance, and supply concerns are reported promptly.
- Attendance, punctuality, and respectful teamwork are consistently maintained.
