Fortinos Pane Fresco Commissary – Raw Dough Manufacturing Facility

Pane Fresco is seeking an experienced and motivated Assistant Bakery

Production Manager to support the daily operation of our SQF certified raw dough manufacturing facility.

In this hands-on leadership role, you will work closely with the Bakery Production Manager to lead production, support colleagues, maintain high standards of food safety and quality, and ensure daily production goals are achieved safely and efficiently.

This is an excellent opportunity for someone with food-manufacturing experience who enjoys leading teams, improving processes, and working in a fast-paced production environment.

• Support the Bakery Manager in overseeing daily production operations.
• Lead, coach, and support production colleagues to achieve safety, quality, and productivity expectations.
• Coordinate daily workflow and help ensure production schedules and targets are met.
• Oversee key production activities, including dough mixing, processing, portioning, packaging, and storage.
• Ensure products are produced according to established recipes, specifications, and quality standards.
• Maintain high standards for food safety, sanitation, GMPs, allergen control, and workplace safety.
• Monitor product quality, yields, waste, labour efficiency, and other key production measures.
• Assist with production planning, staffing, and allocation of resources.
• Identify and help resolve production, quality, equipment, and workflow issues.
• Work collaboratively with Quality Assurance, Sanitation, Maintenance, Warehouse, and other support teams.
• Support onboarding, training, coaching, and development of colleagues.
• Participate in continuous-improvement initiatives, product trials, and process improvements.
• Provide leadership coverage in the Bakery Manager’s absence, as required.

• Previous supervisory or leadership experience in a food-manufacturing, or production environment.
• Experience in commercial bakery or dough production is considered a strong asset.
• Knowledge of food safety, sanitation, GMPs, allergen controls, and quality standards.
• Strong leadership and people-management skills.
• Excellent communication, organization, and problem-solving abilities.
• Ability to remain organized and make sound decisions in a fast-paced environment.
• A hands-on leadership style and willingness to spend significant time on the production floor.
• Basic computer skills and comfort completing production and operational documentation.
• Ability to work collaboratively across multiple departments and functions.
• Flexibility to work varying shifts (seven day operation), weekends, holidays, and overtime based on operational requirements
