Capo brings a fresh take on regional Italian fare, familiar yet elevated, while The Spritz offers a curated cocktail experience rooted in Italian classics with a modern twist.
We are seeking a passionate and experienced Executive Chef to lead the culinary vision for Capo & The Spritz. This is a key leadership role responsible for setting the tone in the kitchen, developing menus that celebrate seasonal ingredients and regional Italian flavours, and delivering a dining experience that keeps both locals and hotel guests coming back for more.
The ideal candidate is a creative and driven culinary professional with a deep respect for Italian cuisine and a collaborative leadership style. You'll mentor an experienced kitchen team, manage daily operations with precision, and bring elevated yet approachable dishes to life in one of Yaletown's most beloved dining destinations.
This full-time, permanent position offers a salary range of $75,000-$95,000 per year, based with experience and qualifications.
Key Responsibilities
- Lead the culinary direction for Capo & The Spritz, ensuring consistently high standards in food quality, presentation, and guest satisfaction.
- Develop and execute seasonal menus that highlight fresh, local ingredients and regional Italian inspiration.
- Collaborate closely with the General Manager and Food & Beverage leadership to align culinary programming with brand standards and guest expectations.
- Provide daily leadership and mentorship to the kitchen team, including an established Sous Chef, fostering a positive, professional, and growth-focused environment.
- Manage inventory, food costing, ordering, and kitchen scheduling to meet financial and operational goals.
- Maintain full compliance with health and safety regulations and quality control standards.
- Stay informed of industry trends and innovations, incorporating fresh ideas and techniques into the kitchen's repertoire.
- Represent the culinary team in guest-facing moments, fostering connection and feedback.
Requirements
- 5+ years of experience in a senior culinary leadership role, ideally in a full-service, high-volume restaurant or boutique hotel setting.
- Expertise in Italian cuisine, with a flair for creating modern, elevated interpretations of traditional dishes.
- A collaborative and motivational leadership style with a track record of developing strong kitchen teams.
- Strong business acumen including menu costing, purchasing, scheduling, and labour control.
- High attention to detail, creativity, and consistency in execution.
- Red Seal Certification or formal culinary education preferred.
- Must be legally eligible to work in Canada.
