What You'll Be Doing

As a Pastry Cook II, you will support the preparation and presentation of high-quality pastry products while maintaining Fairmont's standards for consistency, presentation, food safety and guest experience.

  • Prepare, bake, finish and present pastry and dessert items according to established recipes, specifications and presentation standards
  • Complete daily mise en place and maintain an organized and well-prepared workstation
  • Support the preparation of pastry items for à la carte service, banquets, buffets and other hotel operations
  • Maintain consistency in quality, portioning, freshness, temperature and presentation
  • Follow established food safety, sanitation and allergen-handling procedures
  • Properly label, date, store and rotate products to maintain freshness and minimize waste
  • Monitor stock levels within the assigned work area and communicate shortages or supply requirements to the appropriate culinary leader
  • Maintain a clean, safe and organized workstation, equipment and storage areas
  • Report equipment concerns, maintenance requirements, product shortages or quality issues promptly
  • Work collaboratively with Pastry and Culinary colleagues to support efficient service and smooth kitchen operations
  • Follow all hotel policies, departmental procedures, health and safety requirements, Collective Agreement provisions and Fairmont service standards
  • Participate in required training and development activities
  • Perform other duties reasonably assigned that are consistent with the nature and scope of the position
Qualifications

What We're Looking For

  • Full availability for the duration of the seasonal assignment
  • Previous professional pastry, baking or culinary experience, preferably within a hotel, restaurant, banquet or similarly high-volume environment
  • Strong knowledge of pastry preparation, baking techniques and kitchen practices
  • FoodSafe Level 1 certification
  • Culinary or Baking & Pastry education is an asset
  • Red Seal certification or progress toward Red Seal certification is preferred
  • Strong attention to detail with a commitment to quality, consistency and presentation
  • Ability to organize and prioritize work effectively in a fast-paced kitchen environment
  • Strong communication and interpersonal skills with the ability to work collaboratively as part of a team
  • Reliable, responsible and able to maintain composure during high-volume periods
  • Flexible availability to work a variety of shifts, including mornings, evenings, weekends and statutory holidays

Physical Requirements

  • Ability to stand and walk for extended periods throughout the shift
  • Ability to regularly lift and carry items weighing up to 23 kg (50 lb), using appropriate equipment or assistance where required and following safe handling procedures
  • Ability to bend, reach, kneel, push and pull as required in the performance of duties
  • Ability to work in kitchen environments that may include exposure to heat, steam, cold temperatures and sharp equipment
  • Ability to safely perform the physical requirements associated with food preparation, storage and kitchen operations
