We are seeking a Chef Tournant to join our team! You would be working closely with Chef d Cuisine (CDC) in all preparation areas and hot and cold galleys. This is senior position being offered to an individual that wants a full time culinary career.
Responsibilities:
- Managing and working on Garde Manger galley
- Prepare seafood for appetizers and inclusion in main dishes
- Have a complete knowledge of all menu items (recipe, portion size, preparation, cooking methods and presentation)
- Proficient use of all equipment in the hot galley including grill, pasta cooker, deep fryer and pizza oven
- Maintain inventory levels at all stations as directed by the CDC
- Manager the hot and cold galleys and prep kitchen in the absence of the CDC
Qualifications:
- Must have good knowledge of authentic Italian Cuisine
- Must have a command of English language and Italian food phrasing.
- Must have a minimum of five (5) experience in a restaurant kitchen as line cook or higher. position.
- Strong leadership qualities to ensure that all direct and indirect subordinates are fully aware of Company standards concerning food production, presentation, food handling and health and hygiene programs.
- Have the ability to efficiently amend orders to suit customers needs including addressing any food allergies
