We are seeking a Chef Tournant to join our team! You would be working closely with Chef d Cuisine (CDC) in all preparation areas and hot and cold galleys. This is senior position being offered to an individual that wants a full time culinary career.

Responsibilities:

  • Managing and working on Garde Manger galley
  • Prepare seafood for appetizers and inclusion in main dishes
  • Have a complete knowledge of all menu items (recipe, portion size, preparation, cooking methods and presentation)
  • Proficient use of all equipment in the hot galley including grill, pasta cooker, deep fryer and pizza oven
  • Maintain inventory levels at all stations as directed by the CDC
  • Manager the hot and cold galleys and prep kitchen in the absence of the CDC

Qualifications:

  • Must have good knowledge of authentic Italian Cuisine
  • Must have a command of English language and Italian food phrasing.
  • Must have a minimum of five (5) experience in a restaurant kitchen as line cook or higher. position.
  • Strong leadership qualities to ensure that all direct and indirect subordinates are fully aware of Company standards concerning food production, presentation, food handling and health and hygiene programs.
  • Have the ability to efficiently amend orders to suit customers needs including addressing any food allergies
