About this Opportunity

The Richmond Country Club (RCC) is recruiting a salaried full-time Sous Chef to join our Culinary team. The candidate The candidate would report to the Director of Culinary and Executive Sous Chef. The Sous Chef will work as a cohesive crew with the Culinary and Food & Beverage Service team to deliver exceptional service to the membership and their guests.

The Sous Chef would take charge as one of the leaders of the culinary team, innately preparing and supporting the team to execute the menu with quality, consistency and meticulousness. The Sous Chef also ensures the team follows the systems that are created by the Director, Culinary & the Executive Sous Chef, thereby following distinctive standards, while inspiring others to follow lead. The Sous Chef is also in charge of holding the team accountable to the established cleanliness and order, and while on shift serves as the liaison officer between the kitchen and Front of House (FOH) staff, and ensures the overall workplace is compliant with local safety standards.

The Sous Chef's Duties and Responsibilities:

  • Timely preparing and executing the different types of menus as set out by the Director Culinary, with utmost quality and standards.
  • Dynamically handling and working the various stations in the kitchen: such as preparation, cleaning, and stocking stations.
  • Actively ensuring everything is set up adequately for service.
  • Collaborating with the team to facilitate smooth and efficient service.
  • Energetically work and accelerate activities, while prioritizing during high-volume peak hours.
  • Calmly managing the consistency and quality of food.
  • Generously acting as a guide and support to team members and other areas of the kitchen as needed.
  • Actively maintaining a clean kitchen and adhering strictly to all health and safety regulations.
  • Responsible for food purchasing and inventory.
  • Responsible for labour and scheduling.
  • Actively supports the Executive Sous Chef.
  • In charge in the absence of the Director, Culinary & the Executive Sous Chef.
  • Complying with the RCC uniform policy.
  • Assisting the team with receiving and storing deliveries and cross-checking that the delivery matches the invoice.
  • Responsible for ensuring that the team records daily temperature logs of all coolers to ensure cooler operation and food quality.
  • Responsible for recording and managing food waste on a monthly log with a description and reason for waste.
  • Continuing to update knowledge of various cooking methods and procedures.
  • Understanding of food preparation and techniques.
  • Preparing and ensuring the team prepares all food items following the current recipes provided.
  • Converting recipes into different batch sizes.
  • Converting recipes from imperial to metric scales.
  • Following, prioritizing, and efficiently managing time to execute the prep list.
  • Creating the following days prep list.
  • Assisting with daily staff/green crew meals.
  • Setting up line for service, including all utensils, equipment, and prep.
  • Following pre-service line check.
  • Executing service and dishes as outlined by specs provided in a timely fashion with care for presentation.
  • Accommodates members with specific diet and health concerns.
  • Responsible for prep and execution of banquet events.
  • Adaptable and trained to work at all stations including Aces Kitchen and Cabana area.
  • Training new employees and cross-training existing employees.
  • Treating tools and equipment with care, respect, and safety in mind.
  • Reporting any equipment damage to the Chef.
  • Cleaning and organizing the walk-in cooler and freezer daily.
  • Following the closing duties checklist.
  • Cleaning and organizing the shed storage area.
  • Daily/nightly cleaning of kitchen, equipment, and anything else the Chef may request.
  • Assisting in working in the dish area and any allocated dishes.
  • Responsible for creating daily features program.
  • Following daily schedule sign-in and out deadlines.
  • Completing tasks and duties in the allocated time given by the Chef.

  • Strong communication skills, verbal and written.
  • At least 5 years of full-service restaurant kitchen experience is required.
  • 2+ years of experience in a similar role.
  • Quality and volume food production.
  • High standards of organization and time efficiency in a fast-paced operation.
  • Ability to lead, make decisions, and problem-solve as required is essential in this role.
  • Ability to learn and take on new systems and procedures
  • Ability to ensure a team of line cooks abide by set standards, recipes, policies and procedures.
  • Knowledge of various cooking methods and procedures.
  • A keen and continuous learner.
  • Adding your unique sense of quality and work ethic to RCCs work standards.
  • Ability to work independently while fostering teamwork, including the FOH team.
  • Ability to work in Canada - Work Permit/ PR/ Citizenship status required.

Required Licenses/ Certificates/ Skills:

  • FOODSAFE Level 1
  • Culinary Training

  • Evening and weekend work (Friday, Saturday & Sunday) availability is crucial to this role.

  • Ability to reliably commute to RCC Richmond, BC is crucial.
  • This position will not be eligible to participate in the gratuity/ tips program.

More information on the role:

  • Job Environment: On-site only, Indoor restaurant kitchen, outdoor patio service, and pool-side cabana environment based on operations.
  • Annual Base Salary: $65,000 - $75,000 per hour (based on experience and skills).
  • Ability to commute/relocate: Richmond, BC- reliably commute or plan to relocate before starting work (required)

The Operations:

The RCC clubhouse features kitchen facilities, two restaurants, and an outdoor patio and dining facility.

The F&B department is comprised of two food and beverage outlets and catering for events. As a private club we provide a quintessential dining destination, with our Macans restaurant, and a relaxing, casual setting within Aces.
