The Cook 2 will know the proper cooking procedures and plating of all menu items. He/she will know how to properly set up kitchen stations for service. The Cook 2 ensures subordinates are trained and oriented on the use of equipment prior to their being tasked and ensures HPPA Food Premises regulations are adhered to. Main Duties • Report for duty punctually wearing the correct and clean uniform and shoes • Bring a good attitude to work and contribute to a positive and professional work environment • Setup station(s) and keep it/them clean, sanitized and neat at all times • Ensure HPPA Food Premises regulations are adhere to including (but not limited to) food storage, time and temperature controls, sanitation and contamination controls; direct subordinates accordingly • Prepare and plate food items to established standards • Put away received inventory • Keep wastage to a minimum and record on the wastage report form • Inform supervisor of any significant loss of product • Inform supervisor on any problems that arise during shift • Inform supervisor of food or china shortages • Ensure subordinate staff have the required training and orientation prior to using equipment or performing tasks • Direct subordinates in the safe and standard execution of tasks assigned to them • Maintain and ensure teamwork and good work ethic with your colleagues and all other departments • Assist fellow workers in their duties • Practice safe work habits, know and enforce Club policies and procedures Supervises: • Kitchen General Helper(s) Work Environment • Fast-paced and demanding environment during events and high demand/peak periods • Exposure to hot temperatures (item and surfaces), sharp implements, steam and noise. Deemed a Safety Sensitive Position • Must be able to move, lift, carry, push, pull, and place objects weighing up to 50 pounds • Must be able to reach overhead and below the knees, including bending, twisting and pulling • Standing and on your feet for extended periods of time Work Hours • Work hours may include; weekends, weekdays and holiday shifts, split shifts, early mornings and late evening shifts • Overtime may be required during peak periods
