Job Description:
- Prepares and cooks foods, as per menu, and special requirements, using standardized recipes, appropriate portions, and facility procedures.
- Assists in the standardization of recipes, portion control and food requirements to ensure high quality food and safe food products as well as prevent food waste.
- Plates all food in an attractive, appetizing manner.
- Serves "meals-on-wheels" as required twice per week.
- Responsible to perform duties in dish room.
- Knowledgeable in operating and sanitizing all equipment used on the job.
- Reports any equipment maintenance required to Directors or Food Service Manager or in their absence to the Maintenance Manager, with a note left for the management.
- Locks and secures dietary area at the end of the day. Makes sure all equipment is properly shut down.
- Participates in cook's meetings as required.
- Checks food for proper serving and holding temperatures using food thermometer and records information on the form provided. Proceeds with corrective action when needed.
- Tastes all foods prepared prior to service, using proper tasting procedures, to ensure taste & texture acceptability. Adjusts where needed to improve quality of food.
- Ensures all meals for guests are paid for in the appropriate manner.
- Trains new employees in the cooking position. This includes operation and cleaning of equipment.
- Receives freight deliveries checking invoices and quality of items in deliveries. Assists with unpacking and putting away freight. Reports any issue or damaged product to the Managers.
- Ensures all cooking areas used during the shift by the cook are cleaned and sanitized at the end of the shift. Replenishes all cooking supplies required for cook's preparation areas.
- Follows the correct process for composting, recycling, and disposing of garbage.
- Reports any requests and/or needs of residents, concerns from families and/or other departments to the Directors or Food Service Manager.
- Carries out functions as needed to meet operational requirements i.e., caterings etc.
- Assists other co-workers as required to ensure safe and timely delivery of meal service.
- Maintains a polite, respectful, and cooperative line of communication with co-workers, residents/families, department Managers, and inter-department staff.
- Responsible for the constant supervision of the dietary department during the absence of the Managers, making sure that the department is never left unattended. Exceptions to the kitchen being unattended would include fire alarms and other emergency situations.
- Responsible for the operation and safety in dietary department in the absence of the Managers and reports back to them upon their return. If necessary, reaches them via cell phone in the case of emergency
- Cooks will be scheduled for all existing cook shifts. Shift outlines, tasks and work hours will be adjusted as per departmental requirements.
