Temaki Sushi

Temaki Sushi is located at West Broadway, Vancouver, BC V6K 2C8. We are currently looking for permanent, full time Senior Sushi Chefs. If you are interested, please submit your resume by e-mail or mail.

Position: Senior Sushi Chef
Wages: CAD$35.00-38.00/hour (depending on skills and experience)
Types: Full-time, Permanent (various shifts including evening, weekends, and holidays)
Working hours: hours/week
Benefits: 4% of vacation pay

Job Duties:
Plan and direct the preparation and cooking of sushi and other Japanese dishes
Supervise and coordinate the activities of kitchen staff
Plan menus and create special recipes
Ensure sushi dishes meet high standards of quality, presentation, and consistency
Estimate seafood, rice and other food requirements and assist in controlling food costs
Oversee the selection, inspection and proper handling of fish and seafood to ensure freshness and quality
Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning
Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques
Maintain food safety, sanitation and hygiene standards in accordance with provincial regulations
Prepare sushi and other Japanese dishes on a regular basis

Job Requirements:
Completion of secondary school;
Minimum 5 years of experience in commercial food preparation including two years in a supervisory capacity and experience as a chef are required.
Proficiency in fish filleting, including cleaning, boning, and slicing is required.
Skills demonstrations, including taste and plating abilities, may be required.
