The sous chef is there to run the daily kitchen operations. They will become a leader and mentor becoming a big part of the experience, ensuring we have fresh product on hand and meals are always above guest expectations. The sous chef plays a crucial role in our philosophy of 'Taking care of our employees, to allow them to take care of our guests'

Responsibilities

Ø Kitchen is opened/closed on time and ready for service as per the operating hours of the kitchen.

Ø Abide by all FOOD regulations of food hygiene. Handles, stores and rotates all products properly, FIFO

Ø Ensure the restaurant is complying with employment standards, human rights, health and safety, pest control, food handling and WHMIS.

Ø Assumes 100% responsibility for quality of all food products served

Ø Knows and complies consistently with our standard plating standards and portion sizes, cooking methods, recipes, quality standards and kitchen rules, policies and procedures.

Ø Review/Create prep list, check daily pars and maintain pars as necessary. Order stock for the specific list, ensure all food items are dated and up to company's standards.

Ø Ensure inventory of all products with a 'never 86' attitude

Ø Be conscious of proper storage of all food products and especially aware of hot and cold meats, seafood and other high protein items.

Ø Oversee inventory of the stations. Control quality of food to avoid waste and ensure proper rotation and utilization.

Ø Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.

Ø Keep constant communication between yourself, and your team. (KM,GM, Managers & staff) Daily updates with information to successfully eliminate any communication errors, and to share positive communication (i.e. features, specials, new products, promotions.)

Ø Work with all staff to perform at their best, providing mentoring and coaching with positive feedback. Nip all 'issues' in the bud, talk to staff and explain the 'why'

Ø Fill in where needed and or find coverage, Assistant Kitchen Manager must be able to work all stations to ensure guest experience is not affected in case of a scheduling conflict

Ø Ensure the kitchen is closed properly and the team follows the closing checklist for kitchen stations.

Ø Maintains a clean and sanitary kitchen including prep-tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment.

Ø Understand & implement all policies, procedures, standards, specifications, guidelines and training programs. Creating a good working environment, with an 'open door' policy to all staff

Ø Ordering food, chemicals and paper supplies according to weekly par levels

Ø Daily completion of weekly purchase tracker and successfully within budget
